Afelia (Marinated pork in red wine)

Ingredients
  

  • 1 kg pork fillet cut in small pieces
  • 2 Cups Red Wine
  • 3 tbsp Dried Coriander Crashed
  • 1/3 cup olive oil
  • 1/2 cup Water

Equipment

  • 1 Deep pot or saucepan
  • 1 Stove / hob
  • 1 Wooden spoon or spatula

Method
 

  1. Marinate the pork fillet with the wine,pepper and coriander overnight or at least two to three hours before cooking.
  2. Heat the olive oil in a deep pot and addthe meat with all liquids from the marinade and ½ cup of water. Add also saltto taste.
  3. Lower the heat and let it cook for about 1hour. Add more water if necessary until the meat is cooked and is tender.
